What’s Poppin’?

Popcorn is undoubtedly the perfect snack for all, especially so during the winter months, hiding from the cold and watching a movie. The Gaucho Gazette staff provides three popcorn-based recipes for anyone looking for a tasty treat.

Skittles Popcorn

 

Skittles Popcorn

  • 14 oz. bag of skittles (divided by color)
  • 6-10 cups popcorn
  • 5 x 2 tbsp. corn syrup
  • 5 x ¼ cup butter
  • Parchment paper
  1. Pop the popcorn according to its package instructions. Do not season the popcorn.
  2. Divide into five bowls and set aside.
  3. Then, divide the skittles by color. Each color will make its own batch. Start with one color of skittles, and put the rest aside.
  4. Place ¼ cup butter and 2 tbsp. corn syrup into a small pot on medium heat.
  5. Pour in the first flavor of skittles once the butter is melted and combined with the corn syrup. Stir frequently until the skittles are completely dissolved.
  6. Once the mixture is finished, immediately pour on to one of the bowls of popcorn.
  7. Spread the mixture over the popcorn with a spoon or other mixing device. Avoid touching the mixture, as it will be extremely hot.
  8. Immediately spread the candy-coated popcorn out onto parchment paper, making sure that the popcorn is completely separated. Repeat with all five colors. Wait at least 15 minutes before handling. Serve once the coating is hardened or store in an airtight container.

Caramel Popcorn Balls

Caramel Popcorn Balls

  • 1 cup butter
  • 1 cup light corn syrup
  • 2 cup packed light brown sugar
  • ½ cup granulated sugar
  • 14 oz. sweetened condensed milk
  • 1 tbsp. vanilla extract
  • 8-12 cup popped popcorn
  1. Stir the sugars, butter, and syrup in a pot and bring it to a boil over medium heat until it hits the softball stage (240 degrees – use a candy thermometer).
  2. Continue to stir the mixture while it heats up.
  3. Once it begins to boil, add the vanilla extract and the sweetened condensed milk to the mixture, and let it boil for one more minute.
  4. Pop the popcorn and spread it onto a cookie sheet.
  5. Pour the caramel mixture onto the popcorn .
  6. Mix the caramel and popcorn until the caramel is evenly spread and let it cool for a few minutes.
  7. Spray your hands with cooking spray and begin to form the popcorn balls.
  8. After the popcorn balls are formed, let them cool and harden.
  9. Continue to check the popcorn balls to make sure they hold the ball formation.
  10. Enjoy the tasty treat!

Honey Cinnamon Popcorn

Honey Cinnamon Popcorn

  • 3 tablespoons of coconut oil
  • 1 packet of popcorn, or ¾ cup of popcorn kernels
  • 2 tablespoons of honey
  • Salt
  • Cinnamon
  1. Pour the coconut oil into a large pot over high heat.
  2. To test whether or not the oil is hot enough, place three kernels into the pot and place the lid over it until the kernels have popped.
  3. Pour the remaining kernels into the pot, place the lid onto the pot, and slowly shake the pot over the burner for approximately 5 minutes until there is a one or two second pause in between each pop.
  4. Gently pour the popcorn out into a large bowl. Handle with extreme caution, as the popcorn will be hot.
  5. Wearing gloves, pour in the honey and cinnamon and mix the popcorn thoroughly.  Add more honey or salt according to preferences.
